The Stompetoren Old is an old cheese that has been able to ripen naturally for around 10-12 months. During this ripening process, the cheese masters regularly assess the quality with a so-called cheese drill. In this way you are assured that the taste has developed correctly. The cheese owes its full, creamy taste to the milk of the cows grazing in green pastures. These cows are healthier and moreover have less stress than cows that are in the stable all year round. As a result, cheese made from pasture milk is healthier. Moreover, less salt needs to be added to this. The Stompetoren Old also has a wonderfully spicy taste.

Just like the other types of Stompetoren cheeses, the Stompetoren Old also originates from the province of North Holland. The cows, whose milk this cheese is produced from, graze in a village called Stompetoren. The cheese owes its name to this. The cows can enjoy fertile green pastures and eat plenty of fresh grass. Partly because of this, the milk from these cows is very full and creamy. The CONO cheese factory in Westbeemster then produces the most delicious cheeses from this milk. In addition, the cheese factory stimulates dairy farmers through a premium to actually let their cows graze in these green pastures.


How can you enjoy the Stompetoren Old? The answer to this question is quite diverse. For example, one person enjoys this cheese as a filler on the sandwich, while the other prefers cheese cubes as an addition to a cheese board. How you eat this cheese is entirely up to you.
